There is so much that we can make ourselves!!

Yes, it will take some time. But so does sitting in the drive through or waiting for that product to be shipped. We are so accustomed to assuming that because someone or company has already made it, we can not. This is faulty thinking. There is so much that we can make for ourselves.

I have been buying kraut for the last couple months. I enjoy this company's awesome products. But the truth is with the right ingredients (and there are not that many for kraut) I can make my own. What things are you buying that if you just took a little time to prepare, you would be able to assemble in your kitchen or in your backyard or porch?

Think for a second about all the things you have: products that you'd like to find use for. Create a list. For example, old clothes are a great one. We immediately think that we should donate our clothing, right? I do. But what if you could cut the arms off a sweater and make leg warmers? What about taking that old wholey pajama shirt that you don't want to part with and cutting it into a rag for cleaning. You do not need to buy rags when many of us have enough clothing to do the job.

Be creative. The energy that creates worlds runs through you. Next time you think that you need something, look around your space first. What do you have that could be used in almost the same way as the thing you are getting ready to buy?

I hope this week finds you well, enjoying winter and repurposing well. If you are a fan of kraut or are just aware of its benefits and want to use it for your gut, brain, digestive health, use this recipe. And remember, everything in the store was made by someone or some machine. Though you may feel that you do not have the skills it may take to create the thing you think you need, I promise with a little searching and creativity, you can figure out how to create just about anything, or at the very least be a conscious consumer when you need to be.

Make your own Kraut

Ingredients

1/2 head red cabbage (shredded or thinly sliced)
1 1/2 tablespoon sea/ himalayan salt
1 carrot (shredded or grated)
3 tablespoons fresh ginger (shredded or grated)
2 cloves of garlic (shredded or grated)
1 tablespoon of fresh (grated) or powdered turmeric

Instructions

Clean and prepare your cabbage. In a big bowl combine cabbage and salt. With clean hands, massage the cabbage and salt for 10 minutes. The cabbage should get smaller, more tender and express water.

Then add the remaining ingredients. Continue to massage everything together (about 4-5 minutes).

In clean, sterile glass containers (boil water and pour over glass and top to sterilize). Wait till your jar returns to room temperature. Then using your clean hands, press the mixture into your jar leaving space between the lid and the soon-to-be kraut. If you do not have enough liquid at the top after you have tightly packed your mixture, add some filtered water to the top.

Let your jars stay on the counter or in a cabinet in a warm place to ferment (about 10 days). Open your jars every day to let any air out of the jar. Taste test along the way as well. It should begin to taste like Kraut after the first week, depending on how warm the space, where it is fermenting, is.

Refrigerate once fermented to your liking. Enjoy for up to 6 months.
