Steel Cut Oats and Almond flour Oatmeal Raisin Cookies.....
I have to let you know up front, if you are on a diet, these are not going to save you. These cookies are yummy-- I think the butter has a lot to do with it. You can substitute ghee (clarified butter) in as an alternative. These cookies are really only slightly healthy, but I'll take them when I need a touch of home. Really, I'd rather like to know how much of the "yummy" ingredients are in the cookies I eat. At the very least one can commit to eating consciously if they know what they baked together. The steel cut oats and the almond flour- no white flour here-- are delicious. And instead of white sugar or brown, I used coconut sugar. SO there is some merit. Enjoy. Yields 18 good sized cookies, so share. Here are the ingredients . 1 stick of butter/ 8 table spoons 11/2 cup coconut sugar (Trader Joe's has a good organic bag that's economical.) 1 teaspoon baking powder I teaspoon baking soda 1 3/4 cup almond flour 1/4 teaspoon sea salt 2 eggs
